Super-Food Super Weed
Purslane Eased up on your weeding lately? How smart of you to cultivate a big batch of free super food.

Purslane, that ground-hugging succulent pest, is a great source of vitamins. And, get this, it's a great plant source of omega 3. That's right. The expensive stuff you buy in a bottle and take every day will pop up like a weed when you aren't looking. You can also cultivate it from seeds if you don't have a reliably scruffy patch of ground. Or, you could buy it at a fancy grocery store. But we're betting you aren't willing to pay $46 a pound for something you've spent years trying to eradicate.

Check out this recipe for Mexican purslane stuffing, which you can use as a filling in tortillas or pita bread. Then just sit back and see how your salad grows. Ahhhhh ... this is the good life.
